Start by putting chicken, celery ribs, onion, and broth in a stock pot or Dutch oven. Let that simmer for a while, and you’ll be surprised at how much flavor comes from so few ingredients.

Make the dumplings while that is cooking. Now, don’t be scared of the dumplings. They’re easy to make (my kids even help me!). You just mix up some soft dough, roll it out really thin, and cut it into strips or squares.

  • 6 cup chicken stock
  • 2 broken pieces of celery ribs
  • 1/2 medium onion (keep it in big pieces)
  • 1 pound of boneless, skinless chicken breasts, cut in half for each breast
  • 3 cups flour for everything
  • 1 tablespoon of baking powder
  • 1 1/4 tsp salt 1 cup plus 2 Tbsp milk
  • To taste, salt and pepper

Instructions –Chicken and Dumplings

  • Add water, celery, onion, and chicken breasts to a stockpot or Dutch oven.
  • Bring to a boil, then turn down the heat and simmer, partly covered, for about 15 minutes, or until the chicken breast is cooked through. Make the dumplings while the chicken is cooking.
  • Whisk flour, baking powder, and salt together in a medium bowl. Add the milk and stir just until it comes together into a lumpy dough.
  • Turn the dough out onto a floured surface and roll it out to a thickness of about 1/4 inch.
  • Cut the dough into strips or squares about 1 to 2 inches wide using a pizza cutter.
  • When the chicken is done, take it out of the pan and put it on a cutting board. Take out the pieces of onion and celery and throw them away.
  • Add the dough strips to the simmering broth and cook for about 20 to 30 minutes, stirring
  • every now and then. This will cook the dumplings and make the stock thick like gravy.
  • While the dumplings cook, cut or chop the chicken and put it back in the pot.
  • Taste and add salt and pepper, then serve warm.
